I finally got around to looking up nutritional information on lamb’s quarters, and have found out that not only are they tasty, easily frozen, and easier to manage than spinach, but they are an incredibly good source of vitamin A, vitamin C, and calcium! I’d been vaguely worried about whether I was getting enough calcium. And they grow everywhere, all through the summer. Explain to me again why people do not cultivate these wonderful plants? Oh well, more free lamb’s quarters for me!
